In our restaurant, we use lamb shank meat for three dishes. The first one is the famous Ghabli Uzbeki which is one of the most popular dishes in Afghanistan. The other one is Chelo Goosht which is lamb shank cooked with onion, turmeric, black pepper, cinnamon and ground saffron that is usually served with plain basmati rice. The third one is Baghali Polo that we will dive into its details on this page.
At Rumi Palace, we usually prepare three different types of plant-based rice that are suitable for different tastes and preferences. These rice dishes are as the followings:
1) Plain white rice: It is also known as Basmati rice that is cooked without any additional ingredients. This rice is suitable for dishes such as Ghormeh Sabzi.
2) Rice used for Qabali: This type of rice is mixed with spices, carrot slices, or raisin slices. This type of rich does not get in touch with meat while it is being cooked.
3) Baghali Polo rice: This type of rice is prepared entirely plant-based and does not come into contact with meat unless it is served on the same plate. However, in the Baghali Polo dish, this rice is typically served with meat.
Vegetarian Meal - In addition, this Baghali Polo Rice is inherently a vegetarian dish (Just the rice combined with a vegeterian ghorma). Given that, when it is combined with potatoes, eggplants, or greens, it can create a delicious and wholesome vegetarian meal. Therefore, this type of rice that we cook in our restaurant has the potential to form the foundation of a delightful and hearty plant-based dish. Furthermore, any of our three types of rice combined with vegetables, eggplants, or potatoes can create a flavourful and delicious meal for our customers who have a vegetarian diet. During the cooking process, broad beans (bāghāli) or dill (shevid) are combined with the rice, along with turmeric and salt.
