Baghali Polo - Rumi Palace

About Baghali Polo

Baghali Polo is a traditional Iranian dish that embodies the rich culinary heritage of the country. It is a traditional Iranian dish crafted by Iranians themselves. With its roots tracing back centuries, it is an integral part of Iranian culinary heritage. Its origins can be linked to the vast agricultural lands of Iran, where rice and legumes like broad beans thrived. The dish evolved over time and was influenced by regional variations and the availability of ingredients.

This beloved Persian recipe combines tender meat, fragrant spices, and flavourful dill-infused rice to create a memorable dining experience. It is a dish that features lamb shank as its main component and serves as one of the most delicious Iranian dishes.

Meals with lamb shank at Rumi Palace

In our restaurant, we use lamb shank meat for three dishes. The first one is the famous Ghabli Uzbeki which is one of the most popular dishes in Afghanistan. The other one is Chelo Goosht which is lamb shank cooked with onion, turmeric, black pepper, cinnamon and ground saffron that is usually served with plain basmati rice. The third one is Baghali Polo that we will dive into its details on this page.

How Baghali Polo is prepared at Rumi Palace

During the cooking process, broad beans (bāghāli) or dill (shevid) are combined with the rice, along with turmeric and salt. As the rice cooks, this combination of fava beans and dill imparts a delightful flavour to the rice. For Baghali Polo with Meat, the meat is placed on top of the Baghali rice in a serving dish. The meat is incredibly tender and easily separates from the bone. Moreover, it is well-seasoned with spices specific to cooking this meat that can enhance its overall taste.

The combination of this meat with Baghali rice creates a wonderful, flavourful, and inviting dish that everyone can relish. Baghali Polo with Meat is a staple in Iranian restaurants and gatherings, and it enjoys immense popularity.
