Joojeh Kebab (Chicken Kebab)


Joojeh Kebab is one of the most common Iranian kebabs. It is quite popular at gatherings and parties, and is recognised as one of the most festive Iranian foods. Additionally, Joojeh Kebab is considered a convenient dish since it can be prepared quickly, and its ingredients can be prepared in advance. That is why it has become a popular choice for outdoor events and picnics.

Now let’s talk about the traditional way of preparing the Joojeh Kebab meal. Joojeh Kebab is a traditional and highly favoured Iranian chicken kebab that is often prepared with saffron, and rice. First, chicken pieces are chopped in a way that they are neither too small nor too large for skewers, and when cutting the chicken into pieces, the fats are usually separated from the meat. Then it is about marinating the chicken meat. For flavouring the chicken, they cover it completely with liquid oil (not butter), and then add salt and lemon juice to prevent the chicken from becoming tough. Onion and Saffron are also added to reduce any possible unpleasant odour of the chicken. After the chicken pieces are marinated for 4 to 5 hours, now it's time to skewer the pieces of chicken kebab and grill them on charcoal.

A note about Iranian kebabs: Iranian kebabs possess a unique quality that discourages excessive use of essences and various spices. In Iranian kebabs, the kebabs must provide the main taste and flavour through the meat. If it's minced kebab, you should feel the taste of ground lamb. And if it's chicken, you should sense the flavour of chicken meat.

In our restaurant in Prospect SA, we use the chicken breast for preparing the Joojeh Kebab. Therefore, this meal can be a very healthy dish as chicken breast is all lean tissue without any fat and it is also rich in protein.

Now let's talk about how Joojeh Kebab is prepared at Rumi Palace. In this type of kebab, we divide the chicken breast into much smaller layers and place it in a magical mixture for marinating. This marination is important as it brings the rich flavour and delicious taste of this meal. In this mixture, we use yoghurt, saffron (for both flavour and colour), onions, black pepper, and red pepper, as well as salt. We use a small amount of black and red pepper in order to give the kebab a mild spice taste without making it too hot and spicy. This helps the customer to feel the taste of chicken meat. Finally, after the meat has marinated in the mixture, it is skewered and then grilled over charcoal.

How Joojeh Kebab is served

Once the chicken is cooked, two skewers of Joojeh Kebab (Chicken Kebab) are served with rice and some vegetables and herbs at our restaurant. There is another point about the size of chicken skewers of Joojeh Kebab in Iran. This meal is usually served as one large skewer of chicken. Therefore, you can expect one large skewer to weigh around 350 grams of meat for each skewer. However, in Australia, where restaurants typically serve kebabs in sets of two or three skewers, we have made our Joojeh kebab skewers smaller than what is served in restaurants in Iran. But overall, each skewer of our Joojeh Kebab weighs 200 grams, and there is a total of 400 grams of chicken breast for each meal which is both nutritious and satisfying.
